Roasted Veggies with Raw Summer Squash "Noodles"
1/2 medium summer squash, peeled
1/2 cup brussels sprouts, halved
1/4 white onion
1/2 cup small, portobello mushrooms
1/4 green pepper, diced
1 tbsp olive oil
1 tbsp parmesan cheese, for garnish
1/2 tomato, diced
salt and pepper to taste
Peel 1/2 summer squash into strips using the potato peeler and place in a bowl. Preheat oven to 350*. Coat vegetables in olive oil and place on a greased pan. Place into heated oven for 15 minutes, or until tender. When finished, place into a colander to drain excess liquid. Place vegetables on top of summer squash "noodles," season with salt and pepper, top with tomato and parmesan. Enjoy!
If you need a sauce, this would be perfect with tomato sauce or an olive oil/lemon sauce. I thought it tasted great without sauce, but that's just me!
